Marinated Feta Cheese

Description

Transform an ordinary block of feta cheese with this easy marinated feta recipe. 


Ingredients

  • 8 ounces feta cheese, drained and patted dry
  • 1 cup extra virgin olive oil
  • 2 cloves garlic, sliced
  • 3 to 4 sprigs fresh thyme
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • ½ teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes, optional
  • ¼ teaspoon black pepper

Instructions

  1. Pat the feta dry and cut it into bite-sized cubes. Place it in a clean jar or airtight container.
  2. Combine the olive oil, garlic, thyme sprigs, parsley, lemon juice, lemon zest, dried oregano, cred pepper flakes if using, and black pepper in a small bowl and stir to mix.
  3. Pour the marinade over the feta and gently turn the pieces so they are coated well. Make sure the feta is mostly covered by the oil.
  4. Cover the container and chill in the fridge for at least an hour before serving (overnight is better). Turn the container gently once or twice during that time so the herbs and garlic stay evenly distributed.
  5. Remove the feta from the refrigerator before serving so the oil can loosen. Serve it with toasted bread, crackers, roasted veggies, salads, or as part of a charcuterie.
