Description
Refreshing sesame cold noodles are topped with fresh vegetables and coated in a creamy sauce. These noodles are the perfect summer side dish or main on a warm night.
Ingredients
Noodles
6 oz of soba noodle
½ cucumber, cut into matchsticks (julienned)
1 carrot, peeled and cut into matchsticks (julienned)
1/2 cup shelled edamame
2 green onions, diced
2 tablespoons black or white sesame seeds for garnish
Dressing
Juice from 1 lime
Zest from ½ a lime
2 tablespoons tahini
1 tablespoon maple syrup
1 tablespoon sesame oil
Instructions
- Prepare soba noodles according to package directions. When done, rinse in cold water and add a teaspoon of sesame oil to them to prevent them from sticking.
- In a small bowl, make dressing by mixing lime juice, zest, tahini, maple syrup and sesame oil.
- Add noodles to a large bowl with cucumber, carrots, edamame, and green onion. Add dressing and gently mix to combine.
- Divide between serving bowls and top with sesame seeds.
