Marinaded Herb White Beans

Marinaded herb white beans are my go-to for an aperitif with champagne, crusty bread and a cheese platter in the summer. This simple recipe takes just minutes to bring together and can be made up to 2 days in advance.

This no-cook recipes takes less than 10 minutes to make, making it a great choice when entertaining. Simply mix all of the ingredients together and let marinade, then serve with toasted bread.

KEY INGREDIENTS + VARIATIONS

Beans: The most important ingredient in marinates beans is of course the beans! I make mine with plump butter beans which I highly recommend for their size and buttery texture. Alternatively, you can use great northern or cannellini beans.

Olive oil: I add tons of good quality olive oil to my beans. The olive oil not only helps with the marinade, but is also nice to spoon over crusty bread for serving.

Acidity: White wine or red wine vinegar add acidity while lemon juice and zest add acidity and a burst of freshness. Add a splash more vinegar to bump up the acidity if desired.

Herbs: I usually have cilantro and parsley on hand, so they are my go-to herbs for this recipe. You can add mint, chives, thyme, or dill to mix up the flavor and adapt based on your taste preferences.

Let the mixture sit in the fridge for at least 20 minutes but up to 2 day before serving to really soak up the flavors.

I usually serve these beans for parties with toasted bread, cheese and charcuterie, but they are delicious on toast as a snack.

Description

Marinaded white beans are my go-to for an aperitif with champagne, crusty bread and a cheese platter. This simple recipe takes just minutes to bring together and can be made up to 1 day in advance. 


Ingredients

Scale

1 can of white beans, preferably butter beans, great northern or cannellini, drained and rinsed 
2 tablespoons finely chopped shallot or red onion
1 clove of finely chopped garlic
¼  cup finely chopped fresh parsley and cilantro
1 tablespoon white or red wine vinegar
1 teaspoon lemon zest
1 tablespoon fresh lemon juice
½ cup olive oil
½ teaspoon kosher salt
¼ teaspoon fresh cracked pepper
1 /2 teaspoon crushed red chili flakes (optional)


Instructions

1. Add all ingredients to a medium sized bowl and gently combine. Let combine for a minimum of 20 minutes at room temperature before serving or up to 2 days in the fridge. 
2. Serve with fresh crusty bread or toast. 

Notes

Mint, chives, thyme, or dill can also be mixed in with the parsley and cilantro. Recipe can be doubled.

    I made this on the weekend and it was a huge hit. I added dill which added a nice flavor. Very addictive!

      Such a great flair for a charcuterie board! When I took home the board I noticed the bowl was completely empty but not so much for the dried figs! lol
