Instant pot meal prep chicken legs are a quick and easy way to make several days of healthy lunches. I use chicken leg quarters from Grass Roots Farmers‘ Cooperative for this recipe.

Grass Roots chicken leg quarters are made from 100% pasture raised chicken. They are raised on a small family farm with and are hormone, antibiotic and additive free. These chicken legs are my favorite for meal prep because they stay moist when cooking and don’t require a lot of preparation.
For this recipe, I add liquid to the Instant Pot along with the seasoning. The liquid keeps the meat moist while looking and creates a delicious sauce. The sauce is a little bit sweet and salty. You could add some red pepper flakes or fresh chilies when cooking if you want to add a little spicy.
For meal prep, I usually make a simple salad or roasted vegetables to eat with the chicken. Delicious!

Description
These Instant Pot chicken legs are moist and flavorful and take less than 20 minutes to make.
Ingredients
1 package of Grass Roots chicken quarters
1 tbs olive oil
¼ cup of chicken stock
2 tbs honey
½ cup soy sauce
1 clove of garlic, minced
1 inch of fresh ginger, peeled and minced
juice of 1 lime
1 tablespoon olive oil
1 teaspoon pepper
Green onions or cilantro chopped (optional)
Instructions
1. Turn the Instant Pot to saute mode. When hot, add 1 tablespoon olive oil to the pot. Season the chicken with salt and pepper. Add the chicken to the pot skin side down and cook for about 2 minutes, or until skin is brown and crispy. Turn over and cook for another 2 minutes.
2. Change the Instant Pot setting to manual high pressure. Add the remaining ingredients and mix together with the chicken. Put the lid on the top, lock and seal it.
3. Set the timer for 12 minutes and cook. When time is up, let the pot manually release for 5 minutes.
4. After 5 minutes, open the pot. Use two forks to shred the chicken. Remove the chicken bones and discard.
5. Add the chicken and sauce to individual serving containers. Top with green onions and cilantro if desired.
