Description
Grilled radicchio with blue cheese is an easy, showstopping side dish for any occasion and only takes a few minutes to prepare!
Ingredients

2 heads of radicchio, trimmed and quartered
¼ cup olive oil, plus more for brushing
4 tablespoons of white balsamic vinegar
2 tablespoons of red wine vinegar
1 teaspoon of dijon mustard
½ teaspoon salt
¼ teaspoon black pepper
½ cup crumbled blue cheese
Instructions
- In a small bowl, whisk together white balsamic vinegar, red wine vinegar, olive oil, salt and pepper and ½ of the blue cheese. Set aside.
- Preheat grill to medium-high heat. Brush the radicchio quarters with olive oil and add to grill.
- Cook, turning about every minute, until grill-marked and softened, 2 to 3 minutes per side or desired doneness. Transfer to a serving plate.
- Drizzle dressing over radicchio then top with remaining crumbled blue cheese.
