If you read my pork chorizo chili recipe, you’ll know how obsessed I am with the Grass Roots Farmers’ Cooperative pork chorizo. This month I got to try the Grass Roots bratwurst and I have to say they will be my new obsession for the rest of summer!
I usually grill brats then serve on a bun with tons of mustard and sauerkraut, but decided to try a lower carb recipe. Although I’m not keto or paleo, I think these would qualify for people on both diets. And even if you aren’t trying to eat low-carb, this recipe is so delicious you won’t miss the carbs!
I served mine on these fancy appetizer spoons, but they taste equally good piled high on a plate with mustard and sauerkraut on the side!

Bacon Wrapped Bratwurst
Description
An easy elegant appetizer for any night!
Ingredients
½ package of Grass Roots Farmers’ Cooperative brats
½ package of thin-cut, good-quality bacon
Sauerkart and mustard for serving
Toothpicks
Instructions
- Soak toothpicks in a bowl with cold water.
- Cook brats until just done either in a cast iron pan or on the grill. Make sure not to overcook since they will cook further with the bacon. Remove from heat and let cool enough so you can handle them.
- Cut brats into bite sized pieces.
- Wrap each bite sized brat piece with bacon. I needed to cut about ¼ off each piece of bacon but you can judge how thick you want the bacon to be wrapped around yours. Hold the bacon in place with a soaked toothpick.
- Now you can cook the bacon wrapped bites on the stove over medium-high heat or in the oven at 400 degrees. I really can’t tell you how long to cook the bacon since I’ve learned everyones likes theirs done differently. I like mine crispy so I cooked about 7 minutes on the stove top, turning frequently.
- Serve with sauerkraut and mustard or your other favorite toppings! Enjoy!
