Sesame Cold Noodles

Refreshing sesame cold noodles are topped with fresh vegetables and coated in a creamy sauce. These noodles are the perfect summer side dish or main served on a warm night.

Cold sesame noodles are great served anytime of the year, but especially during hot summer months. When temperatures reach the 90s, turning on the oven or even the BBQ is the last thing I want!

These cold sesame noodles are quick and easy to prepare. Made with soba noodles, fresh veggies, and a creamy sauce, they can be prepared in advance for a quick meal. It’s the perfect dish for a hot summer night or picnic.

Ingredients

  • Soba noodles
  • Cucumber
  • Carrot
  • Edamame 
  • Green onions
  • Black or white sesame seeds
  • Lime
  • Tahini 
  • Maple syrup 
  • Sesame oil

Instructions

1. Prepare soba noodles according to package directions.

2. When done cooking, rinse noodles in cold water and add a teaspoon of sesame oil to prevent sticking. Add to a large bowl.

3. In a small bowl, make dressing by mixing lime juice, zest, tahini, maple syrup and sesame oil.

4. Add cucumber, carrots, edamame, and green onion to bowl with noodles. Add dressing and gently mix to combine.  

Hint: Rinsing the noodles in cold water and adding a bit of sesame oil helps prevent them from sticking while you prepare the rest of the ingredients. If you are making the noodles in advance, run cold water over them again to loosen them up.

Variations

This is a simple recipe that adapts well to your taste. Make it your own by incorporating any of these changes.

  • Spicy – Add ½ to 1 tablespoon of chili pepper flakes to dressing.
  • Noodles – No soba? No problem! Use any thin wheat noodle.
  • Nutty – Use peanut butter in place of tahini for a flavorful substitution.
  • Protein – Add some baked or pan fried tofu for a protein boost.
  • Vegetables – Try adding blanched broccoli or shredded cabbage.

Storage

Prepared noodles can be store in the fridge in an airtight container for up to 3 days. You can also prep individual components in advance and store in fridge for up to 3 days. When ready to serve, run cold water over the noodles again to separate them then follow steps 3 and 4 to finish.

Description

Refreshing sesame cold noodles are topped with fresh vegetables and coated in a creamy sauce. These noodles are the perfect summer side dish or main on a warm night. 


Ingredients

Noodles
6 oz of soba noodle
½ cucumber, cut into matchsticks (julienned)
1 carrot, peeled and cut into matchsticks (julienned)
½ cup shelled edamame 
2 green onions, diced 
2 tablespoons black or white sesame seeds for garnish 

Dressing 
Juice from 1 lime 
Zest from ½ a lime 
2 tablespoons tahini 
1 tablespoon maple syrup 
1 tablespoon sesame oil 


Instructions

  1. Prepare soba noodles according to package directions. When done, rinse in cold water and add a teaspoon of sesame oil to them to prevent them from sticking.
  2. In a small bowl, make dressing by mixing lime juice, zest, tahini, maple syrup and sesame oil.
  3. Add noodles to a large bowl with cucumber, carrots, edamame, and green onion. Add dressing and gently mix to combine. 
  4. Divide between serving bowls and top with sesame seeds.
